Step VII-8: to make Bailey's ecoregions transparent but keep the highlighted (yellow) sections, go to the the Legend Editor and change the "fill color" to the upper-left box with an "x" in it. If you choose the "no fill" option in the previous window, then the highlighted sections are not displayed.
Step IX-12: to print in landscape you must select the landscape option in both the "layout" menu (properties) and the "print setup" (in the "file pulldown menu").
To change the "selection color" go to the main ArcView window (with layout, view, tables options, etc.) and select "properties" from the "project pulldown menu"...
The emphasis of this exercise is NOT on producing a pretty map. Remember that the map and GIS are tools to help you answer spatial questions. In other words, use ArcView (and the map you create) to help you answer the problem-set questions. The emphasis is on the questions!
